A Healthy Halloween! Cook Your Way Into the Fall and Spice Up Your Pumpkin Seeds!
If you’re in the mood for a tasty AND healthy snack, reach for pumpkin seeds! They are nutritional powerhouses containing a wide range of nutrients including magnesium, manganese, copper, zinc and protein. And they are rich in healthy fats, antioxidants and fiber, all of which can benefit your health!
One of the best things about pumpkin seeds is that they are portable and don’t need to be refrigerated so they are the perfect snack for when you’re on the move!
Scrape the seeds out of your pumpkin, then separate from the stringy pulp.
Rinse in a colander, then shake dry.
Spread out 1 cup of seeds on an oiled baking sheet.
Bake for 20 minutes at 300 degrees.
Let them dry, toss with a little canola oil and a few pinches of salt.
Now add your choice of spice mix:
2 teaspoons smoked paprika plus a pinch of cayenne pepper
3/4 teaspoon curry powder plus a few grinds of black pepper
1/2 teaspoon chili powder plus 1/2 teaspoon chopped chipotle in adobo
Return to the oven until crisp, 15 or 20 minutes.
