Kale and Avocado Salad


Serves 4


4 cups finely chopped kale

½ cup chopped basil

1 tablespoon fresh squeezed lemon juice

2 teaspoons olive oil

Sea salt and freshly ground black pepper to taste

1 avocado diced


In a large bowl combine the kale, basil, lemon juice, olive oil, salt, pepper and herbs. Mix thoroughly using your fingers to make sure kale is completely coated. You can make it up to this point then cover and refrigerate until ready to serve. Before serving add avocado and toss lightly.
