Spicy Cashew Dip

Ingredients:

1/2 cup of raw cashews

Juice 1 lime (or store bought organic lime juice)

Juice 1 small lemon (or organic cold pressed lemon juice)

1 to 2 handfuls of fresh cilantro leaves- Add to taste. (Alternately use Arugula or Basil)

1 garlic clove

Approximately 1/2 cup of filtered water

1/2 of a fresh jalapeño deseeded


Process:

In a blender, puree all the ingredients for exactly 15 seconds. The mixture should remain a bit chunky. 

Cashews are a great option for clean eating. They are rich in fiber and low in sugar. They are also tasty, versatile and have heart-healthy fats, Cashews are a good source of copper, magnesium, and manganese which are important for energy production, brain health, immunity, and bone health. If you are aimed at eating anti-inflammatory foods cashews are suggested over peanuts since they offer less inflammation to the gut and are not highly refined like peanuts.
