Roasted Brussels Sprouts with Walnuts and Grapes

Ingredients

4 cups Brussels sprouts, halved or quartered
2 cups red, seedless grapes
1 tablespoon extra-virgin olive oil
2 tablespoons fresh thyme
Kosher salt & freshly ground black pepper 1 teaspoon balsamic vinegar
1/4 cup walnuts, toasted and coarsely chopped


Directions

  1. Pre-heat oven to 450F.

  2. In a 9x13” baking pan, toss brussels sprouts and grapes with olive oil and thyme. Sprinkle with salt & pepper.

  3. Roast for about 20 minutes until caramelized and tender.

  4. Drizzle with balsamic vinegar and scrape up any bits with a wooden spoon.

  5. Toss with walnuts
