Winter Vegetable Curry

Winter Vegetable Curry 

Ingredients:

Prep: 20 minutes  Cook: 5 minutes 8 Servings

2 tablespoons sesame or vegetable oil

½ teaspoon cumin seeds

½ teaspoon coriander seeds

½ teaspoon turmeric

¼ teaspoon cayenne

12-inch piece of ginger, grated

2 white or yellow onions diced

1/3 cup of curry paste

1 butternut squash cubed

6 medium carrots chopped

1 can garbanzo beans

2 cans lite coconut milk (unsweetened 13.5 ounces)

Salt to taste, red pepper flakes if desired

Cooked rice or quinoa

Fresh cilantro to garnish

Add chicken shrimp or beef for a heartier dish, and try swapping various veggies that you have on hand or prefer. We love adding cauliflower, potato, pea, and parsnips.

Instructions:

1.       Add all ingredients except rice/quinoa and garnish to your instant pot and cook for 5 minutes

2.       Serve over rice/quinoa,  garnish with fresh cilantro
